El Chilar Restaurant is located on Benito Juárez and Morelos, near Telmex, in San Jose del Cabos, Los Cabos, Mexico. The setting is casual, almost like dropping by a friend's house for dinner.
Enjoy the rustic ambiance with candelight where the traditional recipes of typical Mexican cuisine is presented with a new touch. When chef Armando Montano steps into the kitchen at El Chilar Restaurant, he's not only coming to work - he comes to share his love of real Mexican cuisine using a wide variety of chiles. Each month he designs a new menu with a variety of chiles as the main ingredient.
Some of the most popular dishes served are scallops and shrimp with the Armando touch. He suggests shrimp in roasted garlic and Guajillo chile sauce as an entrée. You may also want to sample the grilled tortilla and salmon napoleon with mango pico de gallo. Whatever you select, get ready for imaginative creations.

El Chilar Restaurnat has a full bar, a good selection of 90 wines and suggestions for a wine to match your menu choice, reasonable prices, excellent service and air conditioning. Groups, catering and special dinners are available by request. The following is an excerpt form Best Places - Baja A fairly recent addition to the dining scene in San José, El Chilar is a small but very popular eatery, with two talented and ambitious chefs who often push each other into creative fits. Casiano Reyes and Armando Montaño, both from Oaxaca, love to formulate the menu, which changes monthly. Using full-flavored chilies as a focal point, they have captured the attention of the local gringo community, which packs a full house during peak dinner hours.

Their variety of starters might include a salad of fresh greens with an apricot chipotle vinaigrette, followed by entrees like thinly sliced flank steak marinated with a nutty cascabel chile sauce, or a succulent chicken breast with almond and chile guajillo sauce. Paintings by local artist Dana Lieb of Pez Gordo adorn the walls and the cozy cement quarters can get a bit loud when large groups are present, but overall the food and atmosphere are worth experiencing.
